Recipe of the Week: Gratefulicious Granola Bars

A few years back, I sold award-winning granola at my local farmers’ markets. I was very involved with my state organic farming association where I met a woman who produced organic fruits and vegetables. We became friends and I often met her for breakfast to catch up. She ate a strict Paleo diet and ALWAYS ate eggs for breakfast. Lots and lots of eggs. WAY TOO MANY EGGS… So, one day I was determined to find some different things she could eat for breakfast and went home and created a few different Paleo granola recipes. She loved them. and so did lots of other peeps I shared my granola with. To make a long story short, she and I decided to go into business and sell my granola mixed with her fruits and vegetables locally. While this recipe is not one we sold, it is a fam favorite, so I’m sharing it with you here.

GRATEFULICIOUS GRANOLA BARS

Servings: 12

Calories per Serving: Approximately 175 calories

Cooking Time: 20-25 minutes

Total Time: 35-40 Minutes

Ingredients

  • 2 cups chopped nuts (such as almonds and walnuts)
  • 1/2 cup seeds (such as pumpkin, chia, sunflower)
  • 1/2 cup dried fruits (strawberries, blueberries), chopped
  • 1/4 cup coconut nectar, honey, or maple syrup
  • 1/4 cup almond or peanut butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 cup dark chocolate chips (optional)

Cooking Instructions

  1. Prep Your Ingredients: Preheat your oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) square baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped nuts, and dried fruits. Stir in the salt and cinnamon, ensuring an even distribution of ingredients.
  3. Prepare Wet Ingredients: In a microwave-safe bowl or a small saucepan, heat the honey or maple syrup and almond/peanut butter until they are easy to mix together. Stir in the vanilla extract until well combined.
  4. Combine Wet and Dry Ingredients: Pour the warm honey or syrup mixture over the dry ingredients in the large bowl. Stir until all the ingredients are coated and evenly distributed. If you’re using chocolate chips, add them at this stage.
  5. Press Into Pan: Transfer the mixture into the prepared baking pan. Use a spatula or the back of a spoon to press it down firmly and evenly.
  6. Bake: Place the pan in the preheated oven and bake for 20-25 minutes or until the edges start to turn golden brown.
  7. Cool and Cut: Remove the pan from the oven and let it cool in the pan for about 10-15 minutes. Using the parchment paper overhang, lift the entire slab of granola out of the pan and place it on a cutting board. Cut it into bars or squares while it’s still slightly warm.
  8. Enjoy with Gratitude: Once the bars have completely cooled, they are ready to enjoy. Savor each bite with gratitude, and consider taking a moment to jot down something you’re thankful for in your Gratitude Journal as you enjoy these wholesome treats.

Weekly Meditation: Guided Gratitude Mediation

Listen to Audio

Begin by finding a quiet and comfortable place where you can sit or lie down. Close your eyes and take a few deep, cleansing breaths, allowing your body and mind to settle into the present moment.

As you continue to breathe deeply, bring your awareness to the sensations in your body. Feel the support of the chair or cushion beneath you. Let go of any tension you may be holding in your body, starting with your forehead, your jaw, and your shoulders.

Now, let’s turn our attention to gratitude. Gratitude is a powerful emotion that can bring about a profound shift in your perspective and well-being. It’s about recognizing and appreciating the positive aspects of your life, no matter how big or small.

Think about something in your life that you are truly grateful for. It might be a person who has supported you, an experience that brought you joy, a place that holds special meaning, or simply the gift of life itself.

As you bring this source of gratitude to mind, imagine it in vivid detail. Picture it as though it’s happening right now. What do you see? What do you hear? What do you feel? Engage all your senses to make this moment as real as possible.

Now, take a deep, cleansing breath in, and as you exhale, silently or audibly say “thank you.” Feel the gratitude welling up within you and spreading through your heart and throughout your entire being.

As you continue to focus on this source of gratitude, let it expand. Think about more things, people, or experiences that you are thankful for. Allow your mind to wander, and with each breath, bring forth a new element of gratitude. They could be recent blessings or cherished memories from the past.

With each “thank you,” let the warmth of gratitude wash over you, filling you with a sense of joy and contentment.

Now, shift your focus inward. Think about the qualities and strengths within yourself that you are grateful for. Perhaps it’s your resilience, your creativity, your kindness, or your ability to learn and grow.

Take a moment to appreciate these qualities within you. Say “thank you” to yourself for possessing them. Recognize that these qualities are a part of what makes you uniquely you.

As we approach the conclusion of this meditation, take another deep breath in, and as you exhale, release any remaining tension, stress, or negativity. Feel yourself surrounded by the positive energy of gratitude, like a warm embrace.

Slowly open your eyes if they were closed, and carry this feeling of gratitude with you as you continue your day. Remember that gratitude is not just an emotion; it’s a practice that can enrich your life in countless ways.

Whenever you need to reconnect with this profound sense of thankfulness, return to this meditation. Let gratitude be your guiding light, illuminating the path to a more joyful and fulfilling life.
