PROCRASTINATOR’S POWER LUNCH

Servings: 2

Calories per Serving: 350 calories
Prep Time: 15 minutes

Ingredients

  • 2 large whole wheat or spinach tortillas
  • 1 cup hummus (store-bought or homemade)
  • 2 cups mixed salad greens
  • 1 cup tomatoes, sliced
  • 1 cucumber, thinly sliced
  • 1/4 cup shredded carrot
  • 1/2 small red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons balsamic vinaigrette dressing
  • Salt and pepper to taste
  • Chopped black olives (optional)
  • Sliced Pepperoncini peppers (optional)

Instructions

  1. Lay out the tortillas on a clean, flat surface.
  2. Spread a generous layer of hummus evenly over each tortilla, leaving a small border around the edges.
  3. In the center of each tortilla, place a cup of mixed salad greens.
  4. Add the halved cherry tomatoes, cucumber slices, red onion, olives, and pepperoncini, if using, on top of the greens.
  5. Sprinkle crumbled feta cheese over the veggies.
  6. Drizzle balsamic vinaigrette dressing over the ingredients on each tortilla.
  7. Season with a pinch of salt and a dash of black pepper to taste.
  8. Carefully fold in the sides of the tortilla and then roll it up, creating a snug wrap.
  9. Slice the wraps in half at a slight angle to make them easier to handle.+
